Paleo Pumpkin Gluten-Free Chocolate Chip Cookies

(Makes about 21 two inch cookies)

Ingredients:
3 eggs
1/2 C grade B pure maple syrup
3/4 C of pumpkin purée
1 tsp pure vanilla extract
3 C almond flour
1 tsp baking soda
1 tsp salt
1/2 tsp pumpkin pie spice
Dash of cinnamon to taste
1 C of Enjoy Life mini chocolate chips


Directions:
Preheat oven to 350
In a stand up mixer beat together eggs, maple syrup, pumpkin, & vanilla extract. 
Leave beating on medium speed.
In a separate bowl whisk together dry ingredients - almond flour, baking soda, salt, pumpkin pie spice, & cinnamon.

Add dry mixture to wet mixture, continually beating. When mixed well add in the cup of mini chocolate chips. Beat until
incorporated. 
Mixture will be sticky. Scoop out with an ice cream or cookie scoop & place on baking sheet. Cook for 15-17 minutes, or until the tops start to brown. Allow to sit on the
baking pan for a few minutes & then remove & place on a wire rack to cool. 
Eat as is or with a cold glass of almond milk! You can add a dash of pumpkin pie spice to the tops when they are fresh from the oven.

I have personally taste tested these - and they're very hard to stop eating!!
